recipe : Dreamsicle Trifle

Ingredients

2 large cans mandarin oranges
1 small pkg. orange gelatin
1 pint orange sherbet
1 cup whip cream
1 angel food cake, cubed

How to make this recipe 

Drain 1 cup liquid from mandarin oranges.
Bring the liquid to a boil in the microwave. Add gelatin, and stir to dissolve. Cool until just warm. Add orange sherbet, and mix until melted. Gently fold in whipped cream.
Add one half of the cake cubes in the trifle dish in a tight layer. Add the orange mixture over the top of the cake cubes.
Add a thin layer of whipped topping. Add a layer of mandarin oranges.
Repeat the process. Refrigerate at least 2 hours before serving.
Bonus Garnish Tip:
For attractive orange curls, use strips of orange peel.

recipe : 24 hour Fruit Salad

Ingredients

1 cup whipping cream, whipped
1 (3 ounce) box instant vanilla pudding
1 3⁄4 cups milk
1 (8 ounce) can mandarin oranges, drained DRY (very important)
1 (20 ounce) can pineapple chunks, drained DRY
1 cup green grape, halved
1 cup red grapes, halved
1⁄2 cup maraschino cherry
1⁄2 cup marshmallows

On the day before you need the salad, whip the cream. You can sweeten it with a bit of sugar if desired, but it's not needed.
Mix the pudding mix and milk together until thick.
Fold the whipped cream and pudding together.
Fold the fruits and marshmallows into the cream and pudding mixture.
Refrigerate overnight.

recipe : Taco Spaghetti Bake

Ingredients

1 1/2 lbs. ground beef
1 small onion, chopped
6 tbsp butter
1/2 cup flour
1 1/2 cups milk
1 15 oz can tomato sauce
1 can diced tomatoes (I used fire roasted)
1 16 oz. block Colby Jack cheese, shredded
1 8 oz. block of Pepperjack cheese, shredded
2 tbsp cilantro, chopped
1 tbsp ground cumin
2 tsp chili powder
1/2 tsp-1 tsp salt
1 16 oz. package of angel hair pasta, cooked to al dente
Toppings:  green onions, sliced black olives, cilantro
Preheat oven to 350.  Spray casserole dish with nonstick cooking spray.  In a large pot, brown ground beef and onion.  Remove all of beef mixture to large bowl when cooked.  Add butter to same pot.  Melt butter over medium heat.  Whisk in flour constantly for 2 mins.  Reduce heat to medium low.  Gradually add in milk and tomato sauce.  Continue to slowly whisk to combine with flour mixture.  Add in diced tomatoes.  Cook, stirring occasionally, for 10 mins or until mixture has thickened.  Add beef mixture back to pot, shredded cheeses (reserving 1/2 cup of each for topping), cilantro, cumin, chili powder, and 1/2 tsp salt.  Taste and add more salt, if necessary.  Stir in cooked pasta, mixing well to combine.  Spoon into casserole dish and top with remaining cheese.  Cover with foil and bake for 30 minutes.  Remove from oven and top with sliced olives and green onions and additional cilantro if desired.  Let cool for 10 mins before serving.

recipe : Revani & Basboosa

Ingredients

Yogurt - 500 gms
Semolina - 500 gms
Sugar - 600 gms (200 gms + 400 gms)
Eggs - 4
Butter - 125 gms
Vanilla essence - 1/2 tsp
Baking powder - 3 tsp
Bread crumbs - 3 tbsp
Lemon juice of 1 lemon.
Dry Coconut flakes - 50 gms
Water - 750 ml

How to make this recipe

step 1. Mix and combine together Yogurt, eggs, 200 gms sugar and the essence in a large bowl.
step 2. Melt the butter separately and allow it to cool for about 5 to 7 mins.
step 3. Add the butter to the Yogurt mixture and mix well without forming any lumps, until the sugar is fully dissolved.
step 4. Mix the Semolina and the baking powder and add to the Yogurt-Butter mixture. Beat well.
step 5. Take a big cake tin ( could be rectangular or a circular one) and grease it with butter. Sprinkle the bread crumbs and rotate the tin thoroughly to cover the entire area(The reason for using bread crumbs will be clear later)
step 6. Pour over the prepared batter. 
step 7.  Preheat the oven to 175°C and bake the cake for about 45 minutes until it turns golden brown. (This time may vary slightly according to the depth of the tin used. So watch out for the golden browning or insert a skewer to check out if its comes out clean).
step 8. Meanwhile prepare the syrup by dissolving 400 gms of sugar in 750 ml water and bring it to a boil. Cook for a further 5 mins. Now add the lemon juice and let it boil for another 2 minutes. Then set aside for cooling.
step 9. When the cake is done, allow it to cool on a wirerack for about 5 mins and then slowly and in parts pour the sugar syrup evenly all over the cake. Allow it to seep down and soak for about half an hour. 
step 10. Cut into small squares, sprinkle dry coconut flakes for decor.
step 11. The bread crumbs at the bottom form a beautiful brown crust matching the golden brown surface and gets soaked in the syrup to become juicier.
Note : Stays good for about 3 days at room temperature in an air-tight container.

Second step : Now at this step you need to cut the cheese slices into 4 parts then place TWO small pieces on each sandwich. Put the dinner roll tops on. In a sauce pan, mix butter, worcestershire sauce, onion powder, garlic powder and poppy seeds. Wait until all butter is melted and then brush the melted mixture over the ham sandwiches. 
Step 3 : Now you need to cover with foil then let sit in fridge for ONE hour or over night. (If you want to bake them right away, you can also.) Preheat oven to 375 Degrees F then bake about 15 mins or till cheese is melted. Serve. They are great hot and even at room temperature

recipe : CHICKEN CORDON BLEU CASSEROLE

Ingredients

2 cups white rice
3 cups chicken
6 slices of Swiss cheese
10 slices of ham
2 cans of cream of chicken soup
1/2 cup of milk
1/2 cup of sour cream OR plain Greek yogurt
10 saltines
Paprika
Garlic

How to make this recipe

Preheat oven to 350; spray 9x13 baking dish with cooking spray
Cook 2 cups of white rice; spread in the bottom of baking dish
Cook 3 cups of chicken; arrange on top of rice
Layer 6 pieces of Swiss cheese on top of chicken
Dice up 10 slices is ham; later on top of cheese
In separate bowl, mix 2 cans cream of chicken soup, 1/2 cup milk and 1/2 cup of sour cream or plain Greek yogurt; spread on top of ham
In another bowl, crush 10 saltines, add 1/2tsp paprika, 1/4tsp garlic and mix together; sprinkle on top of soup mixture.
Bake at 350 for 30 mins

recipe : Slow Cooker Corned Beef

Ingredients

1 corned beef brisket, 3-4 lbs
1 onion, chopped
3 carrots, chopped
3 stalks celery, chopped
2 garlic cloves
2 cups beef broth
1/4 cup tomato paste
3 tablespoons Worcestershire sauce
2/3 cup brown sugar
1 teaspoon celery seeds
1 dash red pepper flakes
1 tablespoon salt
1/2 tablespoon fresh cracked pepper
1 bottle dark beer

Layer 1/2 of chopped veggies in bottom of slow cooker.
Place corned beef on top of veggie with fat cap up.
Add remaining veggies and garlic around side of meat.
In a bowl, mix beef broth, tomato paste, Worcestershire sauce, brown sugar, celery seeds and red pepper - pour over beef.
Sprinkle salt and pepper over top of corned beef, coating well.
Pour dark beer around side inside of slower cooker.
Cook on low for 8 hours.
When done, remove from cooker, slice or shred with 2 forks.

For Sliders

1 package party rolls or slider buns
Shredded corned beef
6-8 slices Swiss cheese
1000 Island Dressing - 1 cup mayo, 1/2 cup ketchup, 1/4 cup Dijon mustard mixed well.
Preheat oven to 350 degrees.
Slice pan of dinner/slider rolls in half, horizontally - you will have all of the tops attached and a layer of rolls for the bottom.
Spread both sides of bread with sauce.
Layer on shredded corned beef.
Top with Swiss cheese - covering beef.
Gently place top layer of bread on cheese and meat.
Spread a thin layer of butter on top of rolls.
Wrap tightly in  tinfoil, place on a sheet tray and bake in oven for 15 mins.
Remove and slice sliders.

recipe : SICILIAN RICE BALL WITH MEAT & PEAS.

Ingredients;

2 tablespoons butter
1 cup Italian rice
Pinch saffron, optional
1/3 cup dry white wine
Salt and pepper
1 cup grated Parmesan, plus extra for garnish
5 large eggs
2 tablespoons extra-virgin olive oil
1 small onion, diced
4 cloves garlic, chopped
1/2 pound ground lean beef
1/2 pound ground pork
5 large fresh sweet basil leaves, chopped
2 tablespoons tomato paste
4 ounces tomato sauce
2 1/2 cups boiling water, for rice, plus 1/2 cup water, for sauce
1 teaspoons sugar
1/4 cup frozen or fresh peas
1 cup seasoned bread crumbs
2 cups vegetable oil

How to make this recipe

Melt butter in a large pot, pour in uncooked rice and cook for 2 mins. Add saffron, if using and pour in wine until wine evaporates. Begin stirring in boiling water until rice is tender. Cook rice uncovered. Add salt and pepper, to taste. When rice is cooked take off heat, mix in cheese and 2 eggs. Place in refrigerator, covered, for 2 hours or overnight. Rice must be chilled.

In a large frying pan over medium heat add oil, saute onions and the chopped garlic for 2 minutes, add in the beef and pork, and brown. Remove excess grease. Add in basil, tomato paste, tomato sauce , water, and sugar until it all becomes thick in texture. Add peas while still warm, take off heat and set aside. Add salt and pepper, to taste.

Take 2 tablespoons of the rice mixture, place in hand and form a small cup.Place 1/2 teaspoon of the meat mixture to center of the rice cup, add 1 teaspoon of the rice over the meat mixture and roll in a ball. Roll the rice ball in the remaining eggs and then roll that into the bread crumbs. Heat vegetable oil to 360 degrees F. Deep-fry rice balls until browned, place on a paper towel lined plate or dish.Before serving garnish with cheese and/or the extra sauce.

How to make this recipe

    Combine all crust ingredients and pat into the bottom of the pan. Bake at 350 for 20 min. Cool and break into crumbs. Divide crumbs and put half into the bottom of a 9×13 pan.
While the crumb mixture bakes, combine egg whites, lemon juice, sugar, and strawberries in a mixing bowl. Beat mixture for 15- 20 min on medium speed. Fold whipped topping into mixture.
Pour filling over crumbs in the pan, then sprinkle the remaining crumbs over top and freeze overnight.

Cinnamon-Streusel Baked French Toast



Ingredients


HOW TO MAKE THIS RECIPE

    Grease 8-inch baking pan with butter or cooking spray. Tear bread into chunks (or cut into 1-inch cubes) and evenly distribute in the pan (I left this sitting out for an entire day to help dry up the bread -- dry bread soaks up the egg mixture better).
    Mix together eggs, milk, cream, sugar, vanilla and nutmeg (if using). Pour evenly over bread. Cover tightly and store in the fridge several hours or overnight.
    In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add nutmeg if desired. Add butter pieces and but into the dry mixture until mixture resembles fine pebbles. Store in a ziploc or air-tight container in the fridge.
    When you're ready to bake the casserole, preheat oven to 350 D. Remove casserole from oven and sprinkle crumb mixture over the top.  Bake for 45 min for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture.
    Serve with butter, maple syrup and/or fruit (maple syrup is my favorite).
